My Favorite Sourdough Discard Recipes

Homemade loaves are baked at least once a week in my kitchen, and I’ve fallen into a nice rhythm—keeping my starter in the fridge, feeding it just enough, and making it work for me. But no matter how simple my routine is, I’m always left with discard.

So I have to decide: do I toss it in the trash and quickly look the other way… or do I scroll through the dozens of recipes saved on my Pinterest board and find something to make?

Truthfully, I do both. (But I really don’t love throwing it out.)

Over the years, I’ve found a few favorites—my go-to discard recipes that I come back to again and again. Today, I’m sharing three of them with you.

The granola bars are the easiest, but they’re all simple to make. The cinnamon rolls do require starting the night before—but they’re absolutely worth the wait and your kitchen will smell like a cinnamon sugar heaven the next morning!

Sourdough discard granola bars

These granola bars are filled with the goodness of sourdough discard, peanut butter, oats, and chocolate chips. I lightened the honey amount to about 1/3 cup and used monk fruit sweetener instead of brown sugar.
